Image Library > Mushrooms > Pleurotaceae > Oyster Mushroom (Pleurotus ostreatus Group)The oyster mushroom (Pleurotus ostreatus group) is recognized for its shelf-like composition, where it forms clusters which emerge laterally from decaying wood (usually hardwoods, but occasionally conifers). The caps range in color from white to grayish buff and are often thought to resemble oysters — hence the common name and scientific epithet. Oyster mushrooms are considered choice edibles, and are a favorite among many mycophagists (mushroom eaters). [Note: This group includes multiple species which can be challenging to differentiate without DNA sequencing. It is my understanding that mycologist Alan Rockefeller determinted that there are no true P. ostreatus mushrooms in California.
